Wish to degree up your salad sport? This vibrant, versatile penne pasta dish will be served as an appetiser, facet and even predominant.


  • 300 g penne pasta
  • 250 g combined cherry tomatoes; halved or quartered
  • 2 shallots; finely chopped
  • 4 tbsp olive oil
  • 50 g rocket
  • 30 g basil leaves
  • 50 g parmesan
  • salt
  • freshly floor black pepper


Step 1.
Prepare dinner the pasta in a big saucepan of boiling salted water in response to the packet directions, or till al dente.

Step 2.
Drain the pasta, then plunge it into a big bowl of iced water to cease it cooking any additional. When the pasta is totally cool, drain it effectively and switch to a salad bowl.

Step 3.
