Chop chop hummus salad
Substances
500g retailer purchased hummus
3 Lebanese cucumbers, deseeded and roughly chopped
6 radishes, trimmed and roughly chopped
1 small stalk of celery, thinly sliced on a diagonal
1 tbsp finely chopped dill
1 tbsp finely shredded mint
drizzle of olive oil
squeeze of lemon juice
salt flakes
Seed combine:
1 tsp oil
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp pine nuts
Garnish:
1 tsp sumac
1 tsp zaatar
further chopped dill & mint
olive oil
Methodology
Step 1.
Place cucumber, radish and celery in a bowl. Season with salt.
Step 2.
Add chopped dill and mint. Drizzle, drizzle with olive oil and squeeze over lemon juice. Toss. Style Toss, style and modify seasoning if wanted.
Step 3.
For the seed combine, warmth oil in a small non- stick fry pan. Gently toast seeds and pine nuts till golden.
Step 4.
To assemble, schmear hummus onto a serving plate. Spoon vegetable combine over hummus. Sprinkle over seed combine and garnish with sumac, zaatar, further dill and mint. Drizzle with olive oil.
Serves 4-6.
