Bored of banana bread? Your loved ones will love snacking on this candy nut bread, made all of the extra nutritious because of the addition of hidden zucchini and apples.

Substances

For the loaf

  • butter; for greasing
  • 275g self-raising flour; plus further for dusting
  • 2 zucchinis
  • 175g walnut kernels
  • 1 tsp baking powder
  • 1 tsp floor cinnamon
  • 1 pinch salt
  • 3 eggs
  • 200g caster sugar
  • 200ml sunflower oil

For the apple sauce

  • 750g tart apples
  • 3 tbsp caster sugar
  • 1 tbsp lemon juice
  • 1 pinch floor cinnamon

Methodology

Step 1. Preheat the oven to 180C. Grease a 30cm loaf tin with butter and mud frivolously with flour. 

Step 2. Grate one zucchini very finely. Squeeze out the water. Finely grind about 75g walnut kernels and coarsely chop one other 50 g individually. 

Step 3. Combine the flour with the baking powder, cinnamon and salt. Combine collectively the eggs, sugar and oil and regularly add the flour combination. Combine effectively till a clean dough is shaped. 

Step 4. Lastly, stir within the floor and chopped walnuts and grated zucchini and pour the batter into the tin. Bake for about 50 minutes till golden and a skewer inserted into the centre comes out clear.

Step 5. For the apple sauce, peel, core and chop the apples. Put in a pan with the sugar, lemon juice and cinnamon. Pour in 50ml water and simmer, lined, for about 10 minutes. Purée or mash finely and go away to chill. 

Step 6. Permit the loaf to chill barely, then take away from the tin and go away to chill utterly. Spiralise the remaining zucchini to make vegetable noodles and organize on the bread with the remaining walnuts. 

Step 7. To serve, lower into slices and serve with the apple sauce.
